When letting a cake cool after taking it out of the oven, is it better to leave it in the pan or put it on a rack?

Cakes are fragile when they're removed from the oven, so leave them in the pan for 5 minutes before turning onto a wire rack to cool. (Don't leave it any longer or it will sweat and the crust will go soggy.)
